Jesuit University Modifies Its Foodservice Program

Catholic schools work to curb obesity, promote fitness and nutrition

Jesuit-run Loyola University New Orleans recently began a program called "Balance Mind, Body and Soul," run by Sodexho, the school's food service provider. It uses a variety of methods to provide students with healthy eating options and educate them on better eating habits.

Cooking classes are offered to teach students how to cook food properly and choose healthier ingredients when cooking. In the school's dining hall there also is a healthy eating station. The cafeteria has implemented a policy that requires students to get a new plate every time they want more food and to limit the amount of food on each plate.
Most students will eat less simply because they don't want to get back in line. The policy not only reduces the amount of food consumed by each student, but also reduces overall waste from students who take more than they can eat.
